This is a blend of Vijariego Tinto, which is directly pressed, and Gual, also destemmed manually and foot stomped, from Los Topes, a parcel in Orotava. Ferments in open top barriques with the Gual skins, and it rests for 5 months in 8 year-old French oak. Tart berry fruit in the palate, very fresh and tangy. 600 bottles made.
