From Chef Massimo Bottura's own production in Modena, this balsamic is made in the tradizionale style in limited quantities. A blend of several ages, aged in oak, chestnut, and juniper barrels. Dark, glossy, sweet with a tart edge and a thick, syrupy texture. Unlike most balsamics, it holds up beautifully to heat without turning bitter. Use it to finish a dish, dress a salad, or drizzle over parmigiano.
