This 15cm utility knife forms part of the Kai Shun Classic collection of authentic Japanese kitchen knives. Ideal for chopping and slicing smaller vegetables, fruits, cheese, sandwiches due to the small intricate precision blade. Featuring a double-sided blade ensuring uniformed slices with ease. Each knife in the series has been created using high-performance VG-MAX steel at Rockwell 60-61 with a double-bevel blade angled at 16° providing excellent edge retention and cutting performance.
