Pepsin: Overview
Pepsin is a digestive enzyme produced in the stomach that breaks down proteins into smaller peptides, a process known as proteolysis. It is one of the main enzymes involved in protein digestion and functions optimally in the highly acidic environment of the stomach (with a pH of around 1.5 to 2.5). Pepsin is secreted by the stomach lining in an inactive form called pepsinogen, which is then activated by stomach acid.
In addition to its role in digestion, pepsin is used in various industrial and scientific applications. In the food industry, it's sometimes used to tenderize meat and clarify beer. In laboratory research, pepsin is utilized for protein analysis and the preparation of peptide fragments. Pepsin supplements are also available for individuals who have difficulty digesting protein, although they are less common than other digestive enzyme supplements.
