It is also involved in healthy cognitive development, immune health and homocysteine conversion. The P-5-P form of B6 is directly used in B6-dependent enzyme functions in the body. In fact, vitamin B6 and P-5-P are needed for more than 100 enzyme reactions - mostly related to protein metabolism. In a typical diet, B6 can be found in potatoes, poultry, fortified grains and cereals, salmon and avocados. However, many plant sources contain a less bioavailable form of B6 - pyridoxine glucoside.
