ITEM: Small Beans (Naga Dal)

2 cups dried beans, soaked overnight
Salt, to taste
4-5 dried red chillies
1-inch piece of ginger, sliced
150g smoked pork (for flavor, can be more as desired) 
3 whole potatoes, peeled
1 tbsp chilli flakes
2-3 tbsp fermented bamboo shoots 
5 cloves garlic, smashed
Initial Cooking of Beans:
In a pressure cooker, add the soaked beans, a pinch of salt, dried red chillies, and ginger slices.
Cook for 5-6 whistles or until beans are tender.
Adding Pork and Vegetables:
Add the smoked pork and whole potatoes to the cooker.
Remove the dried chillies from the pot, smash them, and return them to the mixture for added depth.
Stir in chilli flakes and the fermented bamboo shoots.
Final Cooking:
Add the smashed garlic cloves for an aromatic finish.
Pressure cook for an additional 5 whistles to allow the flavors to meld and potatoes to soften.
Check seasoning and adjust salt if needed. Serve hot, garnished with a sprinkle of fresh coriander if desired. Enjoy your smoky, spicy, and hearty stew!
