Pissarres is Costers del Priorat’s flagship wine, encompassing both the cool-rugged center of Priorat and the region’s warmer south. The name Pissarres is derived from pizarra, which is ‘slate’ in Spanish. The wine is a blend of organically-farmed grapes from steeply terraced vineyards across a variety of exposures, primarily in Mas Alsera in Torroja and Sant Martí in Bellmunt. Pissarres 2022 is composed of 60% garnacha and 40% samsó (carignan) from vineyards planted as far back as 1934 on red llicorella (decomposed slate) atop limestone subsoil. Winemaker Jose Mas Barberà utilizes the traditional bush vine pruning technique and hand-harvesting. Pissarres is the definition of cool, focused Mediterranean elegance. All Costers del Priorat wines are terroir-forward and made with low intervention and minimal sulfur at bottling. Jose Mas achieves elegance, freshness, and precision in his wines by allowing the vineyards to guide their evolution without ever forcing their trajectory.
Thanks in part to its high Carignan content, this is a more streamlined Priorat that contrasts with many of the powerhouse styles from the region. It's still soft and Mediterranean in character (ripe aromas, dry flavors), but more darkly-toned, with a wash of savory, mineral sensations. You can find lifted aromas reminiscent of purple flowers, and a core of ripe raspberry and cranberry, joined by refreshing accents of citrus and nectarine. Its notes of Mediterranean brush are complemented by subtle "cedary" oak aromas thanks to partial aging in French oak barrels (some new).

Spontaneously fermented in stainless steel and concrete. The wine is not cold-stablized or clarified, only undergoing a light filtering before bottling, with very minimul sulfur addition. Vegan.

After a manual harvest, the wine is spontaneously fermented with indigenous yeasts in 5000L stainless steel tanks. The different varieties in the blend are vinified separately to allow each to express itself fully.  Pissarres is aged for 12 months in a variety of vessels: French oak barrels of 225 and 500L (both new and two years-old), 2000 and 3000L foudres, and a portion in concrete tanks. The wine is not cold-stablized or clarified, only undergoing a light filtering before bottling, with very minimul sulfur addition.
