Aedín is the heroine of an old story from Irish mythology. The grapes are a field blend of Southwestern French varieties (Cabernet Sauvignon and Franc, Malbec, Merlot, Tannat, Fer, Abouriou, Negrette, Ste. Macaire, Ferrol) with dominant Cabernet Sauvignon of a Margaux clone. The grapes are fermented as whole clusters that spent 50 days on the skins prior to pressing, then aged for two years in 300L barrels. Unfined, unfiltered, tiny dose of SO2 at bottling.
